Thrown-together meals, dinner 2 nights ago

Quick easy dinner. Which around our home often means pasta. I had some good chicken-sun dried tomato sausage to use. Started with a handful of peeled whole garlic cloves and threw those into a saucier with olive oil until they were lightly browned and aromatic. Tossed in the sausage sliced up. Added a can of peeled, diced tomatoes (don't usually like to work with canned veggies, but these are definitely handy). The last time I made something like this, the tomatoes were to acidic, so I tossed in a pinch of sugar here to. Added a little chicken stock and reduced just a tad. Checked the seasonings and added salt, pepper, and a bunch of dried oregano. This was served over some sun dried tomatoes and cheese tortellini. And a good dollup of percorino romano, of course.
